rather a lot of different root veg, chopped into 1cm dice. I used: carrots, parsnip, potato, sweet potato, squash. Some celariac would've been nice too.
2 med onions
spices (I used 2 dessert sp curry powder)
1 cupful cooked lentils
stock
mix all chopped veg with some olive oil and roast for about 1hr until soft.
saute onion until soft then add spices and toast. Mix in cooked veg, lentils and stock. Whizz up so some veg is pureed but some is left whole.
Again I made this soup too thick, as I'm freezing it. Will thin it out when defrosting. _________________ Aqui, T and Baby Jack!
